Vegan (Mushroom) Adobo

I was craving for some Filipino comfort food so I decided to make vegan adobo. I made them with mushrooms but you can also use tofu or seitan, the secret is just the simply sauce.

INGREDIENTS

  • 300 g mushrooms
  • 5 bay leaves
  • 200 g potatoes
  • Black peppercorns
  • Soy sauce
  • Vinegar
  • Garlic
  • Vegetable bouillon

INSTRUCTIONS

  1. Cut the potatoes and mushrooms into bite size pieces and set aside.
  2. Crush 3 gloves of garlic.
  3. Add half a cup of water to a pot and add the potatoes, bay leaves, a teaspoon of black peppercorns and garlic. Cook for about 10 minutes.
  4. After 10 minutes add 1 teaspoon of vegetable bouillon and 1/4 of a cup each of soy sauce and vinegar and cook for another 10 minutes.
  5. Serve with white rice.
