I was craving for some Filipino comfort food so I decided to make vegan adobo. I made them with mushrooms but you can also use tofu or seitan, the secret is just the simply sauce.
INGREDIENTS
- 300 g mushrooms
- 5 bay leaves
- 200 g potatoes
- Black peppercorns
- Soy sauce
- Vinegar
- Garlic
- Vegetable bouillon
INSTRUCTIONS
- Cut the potatoes and mushrooms into bite size pieces and set aside.
- Crush 3 gloves of garlic.
- Add half a cup of water to a pot and add the potatoes, bay leaves, a teaspoon of black peppercorns and garlic. Cook for about 10 minutes.
- After 10 minutes add 1 teaspoon of vegetable bouillon and 1/4 of a cup each of soy sauce and vinegar and cook for another 10 minutes.
- Serve with white rice.
